Vegan Kimchi — no shrimp paste, no fish sauce, no fuss! You’ve had kimchi before, but this lazy version keeps all the flavour with zero seafood. Simple, tangy, and totally addictive, everyone can make it at home!
🛒 Ingredients: 2 medium Chinese cabbage 1/2 cup salt (for salting) 1 medium apple 1 onion 5-7 cloves garlic 1 thumb-size piece of ginger 1 tbsp sugar 2 tbsp vinegar 1/2 tbsp mushroom seasoning (for umami) 2 tsp salt (for sauce) 1/2 cup Korean chili flakes (adjust to taste) 1 carrot (julienned) 1/3 small radish (julienned) Handful of spring onions (or chives if you have them)
